it's the weekend AGAIN! Not that I'm unhappy, it's just that these days are moving really fast, don't you think?
Well, this weekend on the Style Hive, I'm taking us to the kitchen.
Everyone loves food and I always say that food is what makes the world go round. Not money. Anyone wants to argue?
After all said, may we go a la cuisine...
I have chosen Plantains as today's food selection.
There are so many things we can use these banana seniors for, from Fried plantains (dodo) to Boiled plantains, Plantain pottage, Roasted plantains (boli), plantain chips and many others.
However, we're going to tweak a little, the bland style of dodo with the help of Gizzards.
Ever heard of Gizzdodo, guys? If You haven't, it's a combo of gizzard and dodo.
It's an exotic, healthy and hearty dish.
So, let's see how it's done.
GIZZDODO
*The Recipe*
Ingredients
• 2 cups Gizzard
• 2-3 cloves Garlic - optional
• 1 tsp. dry pepper - ground
• 1/2 teaspoon Thyme
• 1/2 medium size Onion
• 1/2 cup chopped Green Pepper
• 1/2 cup chopped Red Bell Pepper
• 3 red scotch bonnet pepper (Ata rodo)
• 4 plum tomatoes
• 2 seasoning cubes
• Salt to taste
• 3 medium size ripe plantain
• 4 cups Vegetable Oil for deep frying
Method
STEP I
Wash and peel off the plantain skin.
Cut the plantain into
cubes and sprinkle some salt over it. Let the salt touch every plantain cube by mixing well. Deep fry the plantains
in pre-heated oil till brown then put aside.
STEP II
Dice the gizzard as you've diced the plantains. The gizzard and plantain should be of the same size to even things up. Season the
gizzard with pepper, salt, garlic, chopped onion and thyme. Let the spices enter the gizzard (marinade) for 20 minutes then steam in a small pot for about 5 minutes. Take out the cooked gizzard and keep the stock.
STEP III
Chop all the peppers - the green bell pepper, red bell pepper and scotch bonnet, the tomatoes, the onion and set them aside for later.
STEP IV
Heat 2 tbsp. oil in the frying
pan and fry the cooked gizzard till brown. Add the chopped peppers,
chopped tomatoes and onion. Season and add salt to taste then stir-fry
for 1 minute. Add the fried plantain and toss the food to mix the
vegetables and plantain well. Leave for about 2 minutes.
Your Gizzdodo is all ready, hot and spicy.
